An intense nose of lime and grapefruit, with exotic hints of ginger and jasmine. Lime zest and steely acidity, with subtle, balanced phenolics giving line, generosity, and structure to the palate.
Fresh oysters, crab cakes, salt and pepper squid.
A season that started with decent winter rains, but warm and dry thereafter, ensuring low yields of healthy, concentrated fruit.
Hand-picked on 9th of March from our east-facing block. Dry-grown on deep red, loamy basaltic ferrosols. Hand-sorted on our sorting table, then crushed and pressed after 5 hours of skin contact. Fermented cool in stainless steel with 2 months on fine lees.
